Stewing hens pound

These are spent laying hens.  They are smaller and tougher then broilers but oh so flavourful!  They need to be cooked in a slow cooker or on low heat to extract the flavour and soften the meat.  Incidentally, their fat is bright yellow and doesn’t solidify in the fridge, meaning it is unsaturated and behaves much more like oil.
